Barbieri
Del Christo von Barbieri, the traditional vinegar cellar, lays in the heart of the beautiful Sorbara wine region, which has been known for centuries for it’s discriminating wines and cuisine. As one of the few “Maestro Assaggiatore” (Master-Taster) worldwide, it is a work of passion for Eugenio Barbieri and his daughter Erica, to produce an “Aceto Balsamico di Modena” of the highest quality, made according to the age-old tradition.
Together with Cellar-Master Otello Bonfatti, Eugenio pays close attention to upholding the traditional methods of fine Balsamic vinegar production. Beginning with the precise selection of the best grapes from the family’s own vineyard which are harvested and immediately sorted and heated on the open fire, to the filling and storing of the extracted cider in genuine wooden barrels, with great care is taken.
The traditional Barbieri Balsamic vinegar, owes its distinct taste to a unique mixture of aromas. An exquisite harmony of Juniper-, Oak- and notes of Cherry wood, shape its complex character. At first sweet and then somewhat sour on the palate it is full-bodied and perfectly balanced and can only be compared to gold.
The traditional Balsamic vinegar from Modena is produced in a small limited addition und under strict control of the consortium, individually filled, sealed and numbered.

In the attic, this Balsamic vinegar is aged for a period of at least 12 years under constant and careful supervision to create the resulting masterpiece from the house of Barbieri. Sweet and sour and with the advantages of time on its side, the vinegar is aged to its full potential.

Good things are worth waiting for. Barbieri shows his understanding for this age-old phrase, in the creation of "Extra Vecchio". Rare and exclusive, aged for at least a quarter of a century. The absolute best vinegar available in a class of its own.
