In 1891, Bernardo Ortiz de Zarate founded in Vizcaya (Spain) Conservas Ortiz. Since then a total of 5 generations took care of the family business an contrinued to advance the artisanal and traditional fishing and processing techniques.

To prepare the Ortiz products only the best tuna is used, which originates primarily, due to the special quality, from the domestic Cantabrian Sea. The artisanal fishing techniques, strict observance of catch rates and times serve the survival of fish stocks and prevent unnecessary bycatch. The purification and processing of the fresh catch is based on traditional methods and still done by hand - only the best of the fish comes into the tin. Upon completion, the products are stored until the optimum level of maturity is reached before going into distribution. Many well-known fancy food shops have already discovered the Ortiz specialties for themselves, among others Agata & Valentina and Dean & DeLuca in New York, Haver & Nichols and Fortnum & Mason in London, Lafayette Gourmet in Paris, Johnson in Sydney.

Bonito del Norte - White Tuna

 

The Bonito del Norte is because of its bright, almost white flesh with a silky texture and expressive flavor the best among the tunas. He is fished from July to October in the Bay of Biscaya in the Cantabrian Sea. Sustainable methods of fishing with fishing hooks and the surrender of nets protect the population and the marine habitat of the region. Yellowfin Tuna

 

The Yellowfin Tuna (Yellowfin tuna) originates from the tropical waters. To achieve the best result Ortiz uses only fish that weigh less than 30Kg. In addition on factors such as seasonality, fishing region and methodology are looked extremely fussy in order to obtain the best quality of yellowfin tunas. The flesh of this fish is delicious, juicy and has an impressive consistency.

Ortiz - Bonito del Norte Ventreseca (Ovale Tin)

The fatty portion tuna bulge from Bonito del Norte is valued for centuries as the by far tastiest and most tender part of the fish. The juicy fillets are,  because of their delicate texture, only processed by hand and packaged with extreme care. The Ventresca from Ortiz is available in the classic oval 112g tin in carton with modern design. Because of the relatively small part of the fish bulge, Ventresca is only available in limited quantities and forms with the Special Vintage the peak of the category "tinned fish".
